Victor Heresa Jr., born and raised in Kapaa town and the founder of Sushi Bushido, carries a passion for traditional Japanese sushi, which translates vividly through the restaurant’s menu and atmosphere. Established initially in Lihue in 2004 and having undergone subsequent relocations, it now resides in a purpose-built space at the Coconut Marketplace in Kapaa as of 2019, reflecting an adaptation to an expanding clientele. The operation is characterized as a family endeavor, managed collectively by Victor, his wife Karen, and mother Vernie.

Heresa, with respect to his professional journey, mentioned, “I was trained traditionally. My style was taken from Kyoto, which is an Edo style.” His training lays a foundation upon which the offerings at Sushi Bushido are built, where the traditional sushi-making art finds a harmonious intersection with innovative culinary ideas. He shared specifics about their offerings such as the “Lollipop, Rice Free made with cucumber, peanuts, and hamachi” and a “Tempura Eel Roll,” which features “fresh salmon on the top with a wasabi garlic compound butter over it.” In addition to these, the menu includes an “Ahi combo” which consists of “nine different types of nigiri fish.”

Heresa underscores, “I constantly order fresh fish, most of all the fish that we buy from the fishermen to sell to the block. So it’s all local Hawaii fish.” This adherence to utilizing local resources not only enhances the freshness of the sushi but also ingrains the restaurant within the local economic ecosystem, thereby intertwining it more closely with the community it serves.

Heresa shared, “I think I have the largest selection of sake on the island, mostly all straight from Japan,” pointing towards a deliberate attempt to provide patrons with an authentic and varied sake experience, enhancing the overall dining journey.

Sushi Bushido is named in reference to the Japanese warrior’s code, implying a commitment to principles such as chi (wisdom), jin (benevolence), and yu (courage).
